Biscuit Mix and Quick Biscuits

Introduction

This mix has multiple uses, so keep some on hand anytime you need a biscuit mix. It is similar to the name brand Bisquick and you can use it as a substitute.

The mix doesn't make the absolutely BEST biscuits, but it does allow you to make decent biscuits quickly.

Ingredients

For the Biscuit Mix:

4.5 cups all-purpose flour

1/2 cup milk powder

2.5 Tbsp baking powder

2 Tbsp sugar

1/2 Tbsp salt

1/2 cup lard

For the Biscuits:

2.5 cups biscuit mix

2/3 cups milk 

pinch of salt

2 Tbsp cubed cold butter

Preparation

For the Biscuit Mix:

Sift the flour, milk powder, and baking powder together. Add the sugar and salt and whisk in well with the sifted ingredients. Mix the lard in with your hands, incorporating it into the dry ingredients until it feels a bit like cornmeal. Store in an air-tight container for up to 3 months. 

To Make the Biscuits:

Preheat oven to 450 degrees F. Lightly grease a large baking sheet. 

In a large bowl, add the biscuit mix and the cubed butter. With your hands, squeeze and incorporate the butter into the biscuit mix until you only have small little bits of butter in the mix. The mix should feel “grainier” than when you started. Then add the salt and milk. Mix until a soft dough is formed. 

Turn the dough out onto a lightly floured surface and need briefly, about ten times. Flatten the dough to about 3/4 of an inch thick. Cut biscuits out using a biscuit cutter or the top of a glass. You should be able to get 10-12 biscuits from this dough. 

If you don’t feel like cutting the biscuits, you can also just divide the dough into 12 equal parts and “drop“ them onto the baking sheet. They will not be as smooth textured, but you’ll still have a biscuit nonetheless. 

Place biscuits on your baking sheet about a 1/2 inch apart and bake in the oven for 8-10 minutes, until the biscuits are brown. 

Serve with butter, honey, jam, or our Golden Gravy.
