Flatbread

Introduction

These flatbreads are delicious, versatile, pretty easy to make, taste better than store bought, and probably come out to less money than packaged naan or other flatbreads.

Ingredients

1 packet (2 1/4 tsp) dry active yeast

3/4 cup warm water (around 110 degrees F)

1 1/2 tsp Sugar in the Raw

1/2 cup plain Greek yogurt (as full fat as you can find, though non fat is fine)

2 tsp salt

3 tbsp olive oil

3 - 4 cups flour

1 egg

 

Preparation

In a medium bowl, combine the warm water, sugar, and yeast. Stir, dissolve, and let it sit for about 5 minutes until the top is frothy. Then whisk in the yogurt, oil, and egg.

In another medium bowl, combine 2 cups of flour with the salt. Add the wet ingredients and combine. Continue to add the extra flour until you can't stir it anymore and it isn't super sticky.

Flour a counter top and knead the dough on it for a few minutes. Add additional flour if the dough is still sticky. Knead until it is soft and smooth.

Divide the dough into 10 equal pieces.

Set the dough balls in an oiled glass or wooden bowl and cover with a kitchen towel. Let the dough rise for 40 minutes to an hour.

Heat a large cast iron skillet over medium heat.

Back to your floured surface, roll out each ball to about 1/4 inch thickness and place it (one flatbread at a time) on the skillet. Cook for a few minutes until it starts to bubble and browns on the bottom. Then flip it and cook on the other side until it browns as well.

Now you have some awesome flatbreads to eat with hummus, tzatziki sauce, to make into pizzas, or to simply eat with some butter ... or however you want to eat them. The possibilities are many!
