Quick Pickled Onions

Introduction

These onions are a nice condiment to many dishes, adding a pop of acid and tang.

Ingredients

1/2 onion (use whatever you have on hand, yellow, white, or red), sliced thin

1 tsp salt

1/2 tsp sugar

1/3 cup red wine vinegar

1/2 cup seasoned white wine rice vinegar

Preparation

Place sliced onion in a medium bowl and sprinkle salt and sugar over them. Toss with your hands to distribute more evenly. Then add the vinegars and mix. Make sure that the onions are immersed in the vinegar. Cover with plastic wrap and let it sit out on the counter for 20-30 minutes. You can use them after this point, or move them to the refrigerator until you are ready to use them. They should last for 3-5 days covered in the fridge.
