Black Beans

Introduction

Eat these beans as a side dish or use them in some of several recipes.

Ingredients

2 cups dried black beans

About 6-8 cups of water

1 carrot

1/2 yellow onion

3 cloves garlic

1 packet of Goya Saizon (if you have an intolerance to MSG, use a teaspoon of garlic powder and a teaspoon of onion powder instead)

2 tsp cumin

8-15 tsp of kosher salt

1 tsp chicken bullion

Drizzle of extra virgin olive oil

Preparation

Sort through the dried beans discarding any stones or bad ones that might have gotten in. Then rinse the beans a few times. Then cover the beans in 6 cups of water, leaving enough space in your container for the beans to hydrate, and let soak in the refrigerator overnight.

When you’re ready to cook the beans, transfer the beans with their soaking water into a large pot. Add another cup or two of water as well. Wash the carrot, break it in half and drop it in the beans. Also add the peeled half onion and the three garlic cloves with the skins still on. Bring it to a soft boil, then turn the heat down and simmer for an hour.

After an hour of simmering, start to add the seasonings. Add the Saizon, cumin, chicken bullion, and 4 tsp of salt. Keep simmering for another 30 minutes and then taste the beans. If you need more salt, add another teaspoon or two and let simmer for 15 more minutes and then taste again. We don’t add all of the seasonings at the beginning because as the beans cook, they will absorb more flavor. We can always add salt and seasoning, but we can’t take it out, so salt the beans gradually.

After two hours of simmering, your beans will be ready. You can take the garlic cloves out of their casing and add them to 1/4 cup of beans with some of the bean water along with the carrot and onion and blend them all together in a blender and return to the beans for extra flavoring. If you are going to make bean dip, don’t do this step, but set aside the onion, carrot, and garlic for the dip.

If you’re eating the beans as a side, spoon them into a bowl and top with sour cream, cheese, cilantro, hot sauce, and/or anything else that you would like.
