Creamy White Bean and Chicken Soup

Introduction

You have some options with this recipe. If you make the white bean recipe from dried beans that is on this site, use those beans and the bean broth. If you need to use canned beans, just take 3 (14 oz or close to it) cans of beans, drained and rinsed, and just use regular water or chicken broth instead of the bean broth.

Ingredients

3 chicken breasts, diced into roughly 1 inch pieces

4 cups of white beans (Navy or Cannellini) 

2 Tbsp olive oil

1 yellow onion, diced

1 stalk of celery, diced

3 carrots, diced

3 garlic cloves, minced

28 oz  chicken broth

1/4 cup heavy cream

1/4 cup bean broth

1.5 tsp ground cumin

1 tsp smoked paprika

1/4 tsp Cayenne pepper 

1 tsp plus 1/2 tsp white pepper

4 tsp salt

1/4 cup cilantro, chopped

1 Tbsp all-purpose flour (if you need this to be gluten-free, sub the flour with 2 tsp of corn or potato starch)

Preparation

Coat the chicken in 2 tsp of salt and 1 tsp of the white pepper. In a large pot, heat the olive oil on medium high heat. Drop in the chicken and brown, cooking it through. Remove the chicken, set aside, and add the onion, celery, and carrots. Cook for two minutes and then add the garlic. Continue to cook down for about 5 minutes and then add the cumin, paprika, Cayenne, remaining white pepper and remaining salt. Mix well and cook for two more minutes, reducing heat a bit if it is cooking too fast, meaning don’t burn it. Then add the chicken broth and 3 cups of beans. Return the chicken. Simmer for 20 minutes.

While that’s simmering, in a medium bowl, add the remaining 1 cup of beans. Mash them with a fork or a potato masher, adding in the bean broth while you mash. If you used canned beans, use water or chicken broth instead of bean broth. Once your beans are mashed and looser, whisk in the heavy cream and flour. Then slowly stir the mixture into the simmering pot.

Lightly simmer for another 10 minutes, allowing the soup to thicken a bit. Remove from the heat and fold in the cilantro. Taste the soup and if you need more salt or pepper, add it. Otherwise, it is ready to serve. Eat with corn chips or crackers and top with cheese, bacon, spring onions, more cilantro, sour cream, or whatever else you’d like to use as a topping.
