Homemade Vanilla Ice Cream

Introduction

Nothing screams, "SUMMER" like ice cream! If you like a really vanilla-y vanilla, then this recipe is for you. We ever so slightly burn the sugar to give it a little more depth.

Ingredients

2 cups heavy cream

1.5 cups whole milk

3/4 cups Sugar in the Raw

1 Tbsp vanilla bean paste

pinch of coarse salt

splash of  vanilla extract

Preparation

Heat the sugar on low for a few minutes, stir it occasionally until it smells slightly burnt, but isn’t caramelizing 

Warm milk and slowly pour into sugar, whisking the entire time

Add heavy cream, continue whisking

Add pinch of salt

Continue to heat on low, whisking until it is slightly thickened where it can coat the back of a spoon

Whisk in vanilla bean paste and remove from heat. Add splash of vanilla

If you don't want all of the vanilla specks, you can strain it at this point, but that's optional

Chill for 2+ hours in refrigerator or overnight

Using your ice cream maker’s instructions, add the mixture until you have ice cream. Let it harden in the freezer.
